Mimosa Cup Dessert
The Mimosa Cup is a glass-served dessert created in honor of International Women’s Day. Crumbled almonds and amaretti gently rest on a yellow cream base, recreating the look of mimosa flowers.

Ingredients
- Vanilla powdered sugar (250 g box), 150 g
- Vanilla Novacrema, 1 bag
- milk, 1/2 litre
- sugar, 100 g
- egg yolks, 2
- flour, 35 g
- lemon zest, 1
- salt, a pinch
- liquid cream, 250 ml
- blanched almonds, 50 g
- amaretti, 50 g
- butter, 25 g
Method
In a saucepan, mix together the flour, vanilla custard mix, sugar, and salt. Add the egg yolks and whisk vigorously. Gradually pour in the milk, making sure no lumps form.
Place the saucepan over medium heat and, stirring continuously, add the butter and lemon zest. Once the mixture comes to a boil, continue stirring gently for a few more minutes. Remove the lemon zest at the end of cooking.
Chop 30 g of the almonds and 30 g of the amaretti, then fold them into the cream. Whip the cream with the vanilla icing sugar and gently fold it into the custard mixture. Pour into serving glasses and refrigerate.
Before serving, decorate with the remaining crumbled amaretti and sliced almonds.
If desired, small pieces of fruit can also be added.
