Double-Layer Peach Jam Tart
Inviting and delicious, this tart is even more flavourful thanks to its double layer of jam.

Ingredients
- Viaggi Vanilla Baking Powder, 1 bag
- peach jam, 350 g
- flour 00, 400 g
- sugar, 200 g
- butter, 100 g
- egg, 1
- milk, as needed
Method
Place the flour previously mixed and sifted with the baking powder on a work surface, forming a well. In the center, add the sugar, softened butter, and the egg. Knead the mixture, gradually adding milk until you obtain a firm dough.
Use half of the dough to roll out a sheet about 0.5 cm thick and use it to fully line a 30 cm buttered and floured baking tin. Prick the base with a fork and spread half of the peach jam over it.
Divide the remaining dough into two parts: use one part to roll out a circular sheet about 0.5 cm thick to cover the jam. Spread the remaining jam on top, creating a second layer.
With the remaining dough, cut strips and arrange them on top to form a lattice pattern.
Bake at 180°C (350°F) for about 40–50 minutes.
