Vegan Biancomangiare

A traditional Sicilian recipe, here revisited in a vegan version to suit everyone’s taste and ensure greater inclusivity at the table.

Ingredients
- Corn starch, 55 g
- Powdered sugar (125 g bag), 100 g
- almond milk, 500 ml
- flour, 70 g
- lemon zests, 2
Method
In a large bowl, mix together the powdered sugar, flour, cornstarch, and lemon zest. Slowly add the almond milk, making sure no lumps form.
Cook over medium-low heat, stirring constantly. Once it reaches boiling point, let it boil for at least 1 minute (until the mixture thickens).
Pour into a mold and refrigerate for a few hours (or even better, overnight).
Unmold the pudding, decorate with the remaining lemon zest (or any garnish of your choice), and serve chilled.
