Green Spinach Tortelloni stuffed with Ricotta and Stracchino

Ingredients
- Spinach Powder, 1 tablespoon
- flour type 00, 200 g
- eggs, 2
- ricotta cheese, 150 g
- stracchino cheese, 50 g
- grated cheese, 30 g
- salt, as needed
- pepper, as needed
- nutmeg, as needed
Method
Make a well with the flour and crack the eggs into the center along with the spinach powder. Knead until you get a smooth, homogeneous dough and cover it with plastic wrap. While the dough rests, prepare the filling.
In a bowl, mix the ricotta with the stracchino and the grated cheese, then add a pinch of salt, pepper, and nutmeg.
Roll out the dough thinly with a rolling pin or a pasta machine and cut into squares of about 8 centimeters per side.
Place a teaspoon of filling in each square, fold it into a triangle, then join the two tips together to form a tortellone.
Cook in plenty of salted boiling water for 3 to 4 minutes and dress as desired.
