Ingredients

  1. Potato starch (250 g box), 50 mg
  2. Danilo Baking Powder for Desserts, 1 bag
  3. Vanilla Pods, 1 pod
  4. Powdered sugar (125 g bag), to taste
  5. flour type 00, 220 g
  6. coconut flour, 30 g
  7. eggs, 4
  8. sugar, 220 g
  9. vegetable oil, 120 ml
  10. milk, 120 ml
  11. zest of one lime, 1

Method

Whip the sugar with the eggs until light and fluffy. Then add the milk, oil, lime zest, and the vanilla seeds crushed in a mortar, mixing well. Add the flour, starch, coconut flour, and baking powder in three additions, gently folding from the bottom up to avoid deflating the mixture.
 Bake in a static oven at 180°C (356°F) for 40–45 minutes. Once cooled, decorate with powdered sugar.
