Ingredients

  1. Cream of Tartar (1 kg Bag), 10 g
  2. Baking Soda (250 g box), 5 g
  3. courgettes, 2
  4. tomatoes, 4
  5. flour 00, 230 g
  6. extra virgin olive oil, 30 ml
  7. plain water, 250 ml
  8. salt, 1 teaspoon

Method

Wash and clean the zucchini. Grate them and add them raw to the batter together with the tomatoes cut into small pieces.
 In a bowl, combine the flour, salt, cream of tartar, and baking soda, then add the water.
 Mix everything until you obtain a creamy and thick batter.
 Now add the vegetables and mix again, making sure there are no lumps and that everything is evenly combined.
 Grease and flour the cake pan.
 Bake at 180°C (356°F) for 55–60 minutes.
 Before removing from the oven, do the toothpick test.
