Lime and Ginger Crema Catalana

Ingredients

  1. Crema Catalana Mix (1 kg bag), 110 g
  2. milk, 250 ml
  3. cream, 200 ml
  4. limes, 2
  5. ginger, 30 g
  6. sugar, 22 g

Method

In a bowl, combine the crema catalana mix with the milk and cream until you obtain a smooth, homogeneous mixture.

Using a grater, zest one lime and the ginger, then add the zest to the bowl with the other ingredients.

Pour the mixture into a saucepan and bring to the boil over medium heat for at least 30 seconds, stirring continuously.

Divide the cream into 4 small jars. Allow to cool slightly, then refrigerate for about 1 hour.

Before serving, sprinkle granulated sugar evenly over the surface of the cream. Place the jars under the grill for about 1 minute, until a crisp, golden crust forms.

Garnish the crema catalana with grated lime zest and a slice of candied ginger.

Store in the refrigerator and consume within 24 hours.
