Canestrelli are traditional cookies from the Ligurian region of Italy. Their name comes from their characteristic flower shape, reminiscent of a "canestro" (basket) where they were placed to cool after baking.

Ingredients

  1. Vanilla-Flavoured Impalpable Sugar, 1 bag
  2. flour, 500 g
  3. butter, 400 g
  4. eggs, 2
  5. sugar, 180 g

Method

 
On a pastry board, knead the flour with the softened butter, sugar, and the two egg yolks. Roll out the dough with a rolling pin to a thickness of about 1.5 cm. 

Use cookie cutters to shape the biscuits, then brush them with the egg whites and place them on a lightly buttered baking tray. 

Bake at 180°C (356°F) for 10–15 minutes. Once cooled, dust with vanilled impalpable sugar.
