After the Christmas holidays, when the desire to start again with good resolutions arises, fennel becomes a valuable ally. This vegetable, with its fresh and delicate flavor, is rich in fiber, vitamins and minerals, and its cleansing and digestive properties make it perfect for those who wish to regain balance.

Its fresh taste also pairs beautifully with fish: oven-baked sea bream or a salmon fillet find in fennel a perfect companion, capable of enhancing flavors without overpowering them. 

The virtues of this vegetable go beyond the plate. In its wild form, they also reach the cup through herbal teas and infusions with beneficial properties, used for centuries to aid digestion and counteract abdominal bloating. 

A fennel herbal tea, prepared by infusing the seeds in hot water for a few minutes, is perfect after meals to restore balance and well-being. But there are many possible combinations: fennel and mint for a refreshing effect, fennel and ginger for a stimulating and cleansing infusion, fennel and chamomile for a relaxing tea that promotes evening rest, or fennel and licorice for a sweet, aromatic flavor with an extra touch of liveliness.
